Lemon-Whipped Feta Dip With Roasted Garlic & Herbs

Ingredients

  • ½ cup extra-virgin olive oil
  • 5 cloves garlic, smashed
  • 1 shallot, quartered
  • 3 sprigs fresh thyme
  • 3 sprigs fresh rosemary
  • 8-oz. block feta cheese
  • ½ cup plain Greek yogurt
  • 2 tablespoons honey
  • 1 teaspoon Wonderful Seedless Lemon zest
  • 1 tablespoon Wonderful Seedless Lemon juice
  • Salt and ground black pepper, to taste
  • Wonderful Seedless Lemon slice, for garnish
  • Sliced baguette, toasted for serving

Instructions

  1. Preheat the oven to 400°F. In a small baking dish, add the olive oil, garlic, shallots, thyme, and rosemary. Bake for about 15 minutes, or until the garlic and shallots are golden brown.
  2. In a food processor, combine the feta, yogurt, honey, lemon zest and juice, salt, pepper, and roasted garlic and herbs. (Set aside 1 tablespoon of the roasted garlic and herbs for garnish.) Process until smooth and creamy.
  3. Add the dip to a serving bowl or dish. Garnish with the reserved garlic and herbs and a lemon slice. Serve with toasted sliced baguette.
