Ingredients

Haddock:

  • 2 haddock fillets, 1/2 lb. each
  • Salt and ground black pepper to taste
  • 3 tablespoons olive oil
  • 1 Wonderful Seedless Lemon, cut into 1/4" slices
  • Cooked asparagus, for serving

Lemon-Caper Sauce:

  • 1/4 cup (1/2 stick) butter, melted
  • Juice from 1/2 Wonderful Seedless Lemon
  • 1 tablespoon capers

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper or aluminum foil; set aside.
  2. Season the haddock with salt and ground black pepper. Drizzle with olive oil. Bake for 20 minutes until lightly golden brown.
  3. For the lemon-caper sauce: Meanwhile, in a small bowl, combine the melted butter, lemon juice, and capers; mix well.
  4. Drizzle the lemon-caper sauce over the warm haddock. Garnish with sliced lemons and serve with asparagus.
