Honey-Lemon Salad Dressing

A bright, five-ingredient honey-lemon vinaigrette ready in under five minutes.

Difficulty: Easy — Everything shakes together in one jar in under 5 minutes. The one technique that makes the difference is combining the lemon juice, honey, and mustard first and shaking until the honey dissolves before the oil goes in, which helps the emulsion form quickly and hold longer.

Overview

Five ingredients, one jar, no blender required. This honey-lemon dressing comes together in minutes and makes everything it touches taste better, from simple green salads to grain bowls to grilled chicken.

Ingredients

  • ¼ cup Wonderful Seedless Lemon juice
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 2 tablespoons yellow mustard
  • ½ cup extra-virgin olive oil
  • 2 teaspoons organic chia seeds
  • 2 teaspoons nutritional yeast
  • Zest of 1 Wonderful Seedless Lemon
  • Salt to taste
  • Pepper to taste

Instructions

Combine all the ingredients in a jar, place a lid on it, and shake to combine. Refrigerate until ready to serve.

Optional Tips

Always use fresh lemon juice, never bottled. Fresh and bottled lemon juice are not equivalent. Bottled juice is heat-treated, destroying the volatile aromatic compounds that give fresh lemon its fragrance and brightness. The resulting dressing will taste flat and acidic rather than fresh and lemony.

Use both the juice and the zest for full lemon presence. The juice provides the acidity and the liquid base. The zest provides the aromatic oils that carry a more intense, fragrant lemon character than the juice alone.

Do not skip or substitute the Dijon mustard. The Dijon is the structural emulsifier in this recipe. Without it, you have oil floating on top of lemon juice after 30 seconds.

Choose a raw, good-quality honey. The honey flavor is a prominent part of this dressing. Raw honey has a more complex, floral flavor than processed or filtered honey, and that complexity reads clearly in a simple five-ingredient formula.

Treat the 3:1 oil-to-acid ratio as a starting point, not a rule. Taste the finished dressing and adjust: add more oil for a richer result, more lemon for more brightness, or more honey for more sweetness.

Account for cold olive oil in the refrigerator. Extra-virgin olive oil solidifies partially when refrigerated. Set the jar on the counter for 10 minutes before you plan to use it, then shake vigorously.

Grate the zest before you squeeze the juice. Always zest the lemon before cutting and juicing it. Once the lemon is cut in half, the fruit becomes slippery and the yield drops significantly.

Variations

Honey-Lemon Tahini Dressing. Add 2 tablespoons of tahini to the base recipe before shaking or whisking. The tahini thickens the dressing significantly and adds a rich, nutty note that complements the lemon and honey. Excellent on grain bowls and roasted vegetables.

Honey-Lemon Ginger Dressing. Add one teaspoon of freshly grated ginger to the base recipe. Particularly good on kale, thinly sliced cabbage, edamame bowls, and Asian-inspired salads.

Honey-Lemon Herb Dressing. Add 1 tablespoon each of finely chopped fresh parsley, fresh chives, and fresh thyme to the finished dressing. A French-style herb vinaigrette particularly good on butter lettuce and steamed green beans.

Honey-Lemon Poppy Seed Dressing. Stir 1 tablespoon of poppy seeds into the finished dressing. Excellent on spinach salad with sliced strawberries, mandarin oranges, and candied pecans.

Honey-Lemon Dressing as a Marinade. Use the dressing undiluted as a marinade for chicken breast, salmon fillets, or thick-cut vegetables. Marinate for 30 minutes at room temperature before grilling, roasting, or pan-searing. The honey caramelizes on the surface during cooking, producing a lightly glazed, golden exterior.
